The distillery in Sulby has been the home to innovative distilling for over 40 years and has been run by our family since 1990. The last major change occurred in ’97 when ManX, Manx Spirit was launched following a world-famous legal battle in the London High Courts which went on to shape the very legislation around spirit drinks and their classifications.
Now Rebecca, and her husband Alan, have taken over the reins up at Sulby, though Andrew is never too far away – with a wealth of knowledge from decades in the drinks industry, his guidance is invaluable and Rebecca has no intention of letting him retire just yet!
As part of the refurbishment works carried out at the distillery over the last few years, Alan custom-designed and built a bespoke still that is used in the production of both ManX and Bifrost.
Moving away from the old oil-fired boiler to a much more efficient electrical system has allowed for a far more environmentally friendly process; something that the family have been keen to move towards for some time.
The control system and data logging platform Alan created suit the small batch production runs and allow a level of control over the various phases of the distillation process. “The profile of the heating in the still is monitored electronically and we can experiment with changing the rate of heating and the length of time the spirit is held at each temperature. To be honest, it’s fun to see what happens, no other distiller does what we do, so we are in uncharted territory!”
